I'm talking about Ukrainian syrnyky – cottage cheese pancakes that are packed with protein and great for your gut health.

What is Syrnyky

Syrnyky (in Ukrainian – сирники) is a wonderfully simple, entry-level Ukrainian dish traditionally made with homemade cottage cheese created through natural fermentation. However, you can easily substitute it with alternatives like ricotta, feta, or even dairy-free tofu. Although cottage cheese is a classic choice and my personal preference.

Why Is Cottage Cheese Good for You?

Did you know that a single cup (226 grams) of cottage cheese delivers roughly 24 to 28 grams of protein – primarily in the form of slow-digesting casein, which provides a steady, multi-hour stream of amino acids to fuel muscle repair and keep your stomach full for a long time.

In addition, cottage cheese is a powerhouse for digestive wellness because traditional fermentation infuses it with live and active cultures like Lactobacillus acidophilus and Bifidobacterium. These probiotic bacteria actively colonize and balance your gut microbiome, strengthening the intestines, turning a simple muscle-building staple into a daily treatment for gut health.

Ukrainian Syrnyky: A Step-by-Step Recipe

The closest well-known relative to syrnyky is traditional cheesecake, so the ingredients and cooking process won't come as a surprise. They look just like puffy pancakes and can be pan-fried on the stove, popped in the air fryer, or baked in the oven. You can simply choose whichever method works best for you!

Ingredients:

  • 300 g cottage cheese with removed moisture (drained through a fine-mesh)
  • 1 egg yolk or half an egg
  • 1 -2 tablespoons of flour
  • 2 tablespoons of sugar
  • Pinch of salt
  • Sunflower oil for frying (or oil of your choice)
  • Optional: vanilla, raisins, lemon zest
  • Optional for serving: whipped sour cream with sugar powder and vanilla

Prep time: 15 minutes

Cook time: 30 mins

Portion: 2-3 servings

Instructions:

#1. Mix the Dough:

In a large mixing bowl, combine the cheese (squeeze it through a clean kitchen towel or cheesecloth to remove excess moisture), egg, sugar, vanilla extract, and salt. Stir gently until combined. Fold in the flour 1 tablespoon at a time until a soft, pliable, slightly tacky dough forms. Stop adding flour as soon as the dough holds its shape. If using soaked and patted-dry raisins, gently fold them in now.

#2. Portion and Shape:

I like using the traditional glass method for perfect cylinders. Dust your work surface generously with flour. Scoop about 2 tablespoons of dough and roll it lightly in the flour to form a loose ball. To get perfectly round Ukrainian syrnyky, place an inverted drinking glass or small bowl over the ball on the floured counter. This will flatten and shape them properly.

#3. Fry to Perfection:

Heat 2 to 3 tablespoons of cooking oil of your choice in a large skillet over medium-low heat. Once shimmering, add the syrnyky, leaving space between them so they do not steam. Fry for 3 to 4 minutes on the first side until a deep golden-brown crust develops. 

Flip carefully with a thin spatula, cover the skillet with a lid, and cook for another 3 to 4 minutes on the second side. The lid traps gentle heat, steaming and setting the creamy cheese center without burning the crust.

*Optional: Finish up your process by baking your syrnyky in an oven.

#4. Serve Traditional Style:

Traditional Ukrainian syrnyky are best enjoyed warm with creamy, sweet, and sour toppings. My mom whipped sour cream (smetana) with sugar and vanilla, but you can go for a cherry jelly or blackcurrant preserves, honey, or fresh berries. Chocolate works well here, too!
